I just made the most GLORIOUS vegan tuna salad sandwich in all the world. Dairy free. Soy free. Quick and easy. Flavorful and delicious. Could I ask for more?

Here’s what I used:
1 can chickpeas (drained & patted dry)
Mindful Mayo (the olive oil kind)
Green olives
Lemon juice
Salt to taste
Garlic powder to taste

Simply mash it all together, throw it on a whole wheat English muffin or bread, and top it with mustard, Sriracha, tomato, & lettuce! Nom.

It’s an adaptation of The Vegan Stoner recipe mac and peas. But I use olive oil instead of margarine, I add more seasoning (basil, dill, etc.), and I’ll put in unsweetened almond milk or vegetable broth to get a nice consistency. Also I’ve never made it with peas! haha That was the first time I made it in over a year. I wasn’t totally happy with how it came out so I still have some tweaking to do to get it perfect again.Β
